Founded by partners Andy Perez and Olivia Thayer who met in Brooklyn, NY, our business is built on a shared love for good food, great company, and genuine hospitality. Every baked potato we serve is loaded with flavor, creativity, and care- a reflection of our passion for bringing people together over feel-good meals. The Mexican Style Loaded Potato
Now this — this is not just a baked potato. It’s a full-blown Mexican street-food masterpiece hiding inside a crispy potato skin.
We start with a perfectly baked Idaho potato, topped with juicy carne asada, fresh off the grill, flame-kissed and packed with flavor.
Next, we drown it in house-made queso, rich and velvety, then we pile on fresh pico de gallo — diced tomatoes, onions, cilantro, and lime bringing brightness and crunch — followed by a cool, creamy scoop of guacamole that ties it all together. Finally, a drizzle of salsa verde adds the zesty, tangy kick that makes your taste buds dance.

Throughout his career, Andy has developed a deep appreciation for every part of the dining experience- but it’s in the kitchen where he’s truly found his calling. His creativity, skill and passion for great food shine through in every dish he makes.
Olivia Thayer brings her vibrant energy passion for hospitality to the Loaded Potato after years of experience in the New York City dynamic restaurant scene. Having worked in a variety of front-of-house roles, she’s developed a deep appreciation for creating memorable guest experiences through great service. Her genuine warmth and natural leadership shine in everything she does, and she’s excited to bring that spirit, welcoming every guest with a smile and a fully loaded bite.
